Our Story

Thirty years ago in the small town of Frankfort, Michigan, a little boy had trouble sleeping. His Oma, or grandmother, stayed up during the night with him…baking recipes from her family cookbook. In that moment, while making German delicacies, that boy’s lifelong connection between love and food was born.

Paul’s Story

That passion for cooking blossomed since those childhood days in the Mitten. After graduating from fast-casual cooking restaurants, Chef Paul quickly began working in some of the most renowned kitchens in Orlando. Stints at The Ravenous Pig, Dovecote, Luma, and Pizza Bruno helped him develop and refine a wide range of cooking skills and techniques. Chef Paul’s obvious next step in his career development was to open his own scratch kitchen.

Our Mission

With an ode to his Deutsche heritage, Oldenburg Provisions was created. The mission of the company is to serve the finest German cuisine with some unique, personal twists. The menu will feature well-known street food items like pretzels and bratwurst, while also exploring some more traditional signature dishes like spaetzle alongside seasonal specialties. Regardless of what you order, you can expect a meal prepared with love…just like Oma Oldenburg’s kitchen.
